The Umstead’s signature restaurant, Herons, has gained national recognition for its progressive American regional cuisine and is one of only 64 Forbes Five Star restaurants in the world. The neutral palette of the décor in Herons provides a sophisticated yet understated backdrop to the bright and inspired flavor combinations artfully presented by James Beard Semifinalist and Executive Chef Steven Devereaux Greene and his counterpart, Pastry Chef Jonathan Fisher, delivering a dining experience that is both refined and relaxed. Drawing heavily on produce harvested from their nearby dedicated farm, these fresh flavors, surprising food combinations, and striking presentation are the trademarks of every appetizer, meal, or signature cocktail or wine enjoyed here. The Culinary Team masterfully redefines American cooking by presenting classic ideas translated with seasonal elements and precise techniques, brightening each ingredient's flavor and purpose. One of only 5 restaurants to receive the News & Observers coveted 5 stars, Herons was also awarded their Restaurant of the Year for a second time in 2019 for its unique chef’s tasting menu, “The Art Tour,” of which Food Critic Greg Cox says, “Playing on all the senses with rare virtuosity, the meal earned a place among the handful of most memorable meals of my life.” Inspired by The Umstead's Art Collection, this unique experience begins with a ceremonial tea service followed by 8 delectable courses, each showcasing Chef Greene and Chef Fisher’s approach to food and driven by their choice and presentation.
